Planning some grilling this July 4th weekend? As you may know I like to fancy myself as a bit of a foodie. It’s because of that I like to venture outside the norm and try things with a unique twist. Sometimes that backfires and makes me think to myself “don’t mess with the classics”. But other times the desire to try new things has lead to some tremendously delicious discoveries. If you want to wow your family or friends this July 4th with some different takes on old favorites, here are some of my favorites:

  • Andouille and Beef Burgers with Spicy Mayo and Caramelized Onions:

  • Napa Valley Basil-Smoked Burgers:

  • Spice-Rubbed Chicken and Vegetable Tacos with Cilantro Slaw and Chipotle Cream:

  • This one I make on my own: Mix one stick of butter(room temp), 1 tbsp of fresh squeezed lime juice, 2 tsp fresh chopped thyme, 1 pressed garlic clove, 3 green onions (chopped), salt and pepper (to taste).  This is enough for 8 ears of corn, so either cook the corn and cut off the cob, or if using packaged corn, use 8 ears worth. Toss corn with butter mixture and serve at room temp.
  • Corn, Tomato and Avocado Salad:

Pasta Salad:

  • Warm Pasta Salad with Roasted Corn and Poblanos:

  • Tortellini Salad with Sun-dried-Tomato and Balsamic:

Potato Salad:

  • Mesa Grill’s Southwestern Potato Salad
